Cucumber Salad

2 medium cucumbers
½ tsp. Salt
2 tbls. Sugar
4 tbls. Cider Vinegar

  1. Score and thinly slice 2 medium cucumbers.
  2. Place them in a bowl and toss them with salt.
  3. Mix in sugar and cider vinegar.
  4. Press down with wooden spoon to extract some cucumber juices.
    Let them marinade at least 30 minutes.
  5. Cucumbers will keep for 4-5 days in refrigerator covered.

This salad is wonderful served as part of antipasto with Castleton Crackers of course!
