2 medium cucumbers
½ tsp. Salt
2 tbls. Sugar
4 tbls. Cider Vinegar
- Score and thinly slice 2 medium cucumbers.
- Place them in a bowl and toss them with salt.
- Mix in sugar and cider vinegar.
- Press down with wooden spoon to extract some cucumber juices.
Let them marinade at least 30 minutes.
- Cucumbers will keep for 4-5 days in refrigerator covered.
This salad is wonderful served as part of antipasto with Castleton Crackers of course!
