Spicy Orange Hummus*

1 (15 oz) can chickpeas, drained
2 tbls tahini, (sesame seed paste)
2 tbls onions, chopped
1 clove garlic
¼ cup fresh parsley
¼ cup orange juice
1 tsp Dijon mustard
2 tbls rice vinegar
2 tsps soy sauce
¼ tsp kosher salt
¼ tsp ground cumin

  1. In a food processor, puree the chickpeas with the tahini, onions, garlic and parsley.
  2. Add the orange juice and remaining ingredients and process until smooth Chill well before serving. Yield: 1 3/4 cups. Serve with Castleton Crackers!
